Serves 4- 6 people
1 store bought pie crust or pie crust recipe of your choice
4 whole eggs
1 1/2 cups of heavy cream
1/2 cup crumbled bacon
1/2 cup of sautéed leeks
1 1/2 cups of mozzarella
Salt & pepper to taste
Preheat oven to 350°. Place crust in a pie pan. Crack eggs into a bowl and whisk well. Combine eggs, cream, bacon, leeks and stir. Mix in cheese. Add salt and pepper to taste and stir. Take a spoonful of the mixture and cook it on medium high heat in a skillet. Once sample is cooked through, taste it and adjust salt and pepper if needed. Pour mixture into pie crust and bake for 30 - 45 minutes depending on your taste for doneness.
Notes: Feel free to play with the quantities. If you like a creamier quiche then add more cream and cheese. You can even blend (YES in a blender) the egg, cream, and cheese beforehand to help the mixture be even creamier. It's an "EASY" recipe which is why I omitted this step and we are usually making this recipe for hundreds or thousands of people so I'd probably skip this step anyway :-) Switch out bacon and leeks for your favorite add ins.
